You can absolutely allow test rides without gambling the bike — you just have to run it like a transaction, not a favor. Here's the routine experienced sellers use:
Full price in cash, in your hand, first. This is the golden rule. If the buyer rides away, you've been paid. If they return, the cash comes back and negotiations continue. Anyone offended by this isn't a buyer.
Photograph their license and check it against their face. Helpful for police, though not foolproof on its own.
Confirm they're legal and covered. A motorcycle endorsement matters; also check how your own insurance treats other riders — in many states, damage follows the bike, not the rider. Check your policy and state law.
Set the route. One loop, a few minutes, on streets you name, in a public area during daylight. No "I'll just take it on the highway real quick."
Bring a friend so you're never alone with a stranger and your keys.
For extra peace of mind, a small magnetic tracker under the frame means you're watching the bike's live location during the ride. If the loop turns into a straight line out of town, you're on the phone with police with coordinates — not a description and a shrug.
